INGREDIENTS
  • 1.5 cup almond meal
  • 1/4 cup plain gluten free flour
  • 1/4 cup vegan @happywayau flavourless protein (DC // HAPPYELISE ✨)
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • Salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup olive oil
  • 1/2 cup almond milk
  • 1 mango, chopped
  • 1/2 cup white choc chips (I used dairy free)
  • Handful of chopped Macadamias


METHOD

  1. Preheat your oven to 180 degrees fan-forced.
  2. Add all the dry ingredients to a mixing bowl and combine.
  3. Add in the remaining wet ingredients and stir well until everything is combined.
  4. Fold in the chopped mango, choc chips and macadamias.
  5. Spoon into lined or greased muffin tins (makes 9).
  6. Bake for 22-25 mins.
  7. Allow to cool for 10 mins before removing from the muffin moulds.
Storage in an airtight container in the fridge.
